Which holds more, a size 6/7 diaper or Goodnights?

Probably depends on brand of diaper. But I can confirm that size 7 Pampers holds more than Goodnites.

I find Pampers Size 8 holds more than Drynites (Goodnites). I think Drynites/Goodnites are only intended for one wetting as most people dont pee more than once at night. Idk. But Pampers are better imo

A what is the max size they cam stretch?

No idea because I stretch them more than they are really supposed to. I pre-stretch them. I have never measured

The stretchy-ness is just as important as how much it holds.

I used to be able to stretch some Pampers size 7 around me (I have not tried recently). If I had to guess, I think my waist was around 32 at the time? I weighed ~165 pounds. The stretch was very precarious though, overnight they would break, but is was passable for using baby diapers at much above the age, weight, and size limit they were designed for.
