Baby Cereal Pancakes

I was involved in a discussion about formula and it evolved into talking about baby cereal also. Well my wife gives me rice cereal mixed with formula in my bottle as a treat occasionally. About 1 teaspoon of cereal per ounce of formula (you can substitute milk if you want). Anyway one Saturday morning we were playing “baby time” since the night before and for breakfast she made me Baby Cereal Pancakes so I thought I would share the recipe for others that may enjoy them. If you google them you can find plenty of other similar recipes.

Ingredients​#-ingredients
1 cup whole wheat flour or 1 1/2 all-purpose flour
1/2 cup baby rice cereal straight from the box
1/2 cup baby oatmeal cereal straight from the box
1 cup formula or milk,
1/2 cup mashed banana or other mashed fruit of choice
1 tbsp melted butter
1 egg
1/2 cup apple juice or water
dash of cinnamon nutmeg, or vanilla (optional)

Instructions​#-instructions
Mix all ingredients together. Add the apple juice, and stir until evenly combined and pancake consistency is reached.
Cook on the stove top in a frying pan just as you would ‘regular’ pancakes. I used a small spoon to drop small dollops of batter onto the pan.
Let cool and serve.

Are they anh good though?

Yes! They are firmer and thicker than traditional pancakes, which makes them great finger foods. I get to eat them like a real baby. When we make a batch we double the recipe and freeze the leftovers. Let them cool completely and stack them with wax or parchment paper between in a Tupperware. Then I can grab one when I want. I will take 2 or 3 with me to work and they thaw in my lunchbox. My wife laughs when our yougins (now adults) rave over them, if they only knew… :wink:

My wife is coking up some right now so I have them to take to work with me this week. She LOVES me… :smiling_face_with_3_hearts:
